XHTML from HTML conversion problem

I have recently been helping a friend convert a website from HTML 4.01 to XHTML, and have found a problem. In the past, he simply used <table> and the <center> tag to create a 800px wide page that showed ( obviously ) in the center. THe prblem now is that I don't know how to get the 800px page show in the center without all the text centering as well, any help will be much appreciated.
